Kabocha, pronounced kah-bow-cha, is a winter squash encased in a dull, deep green, hard, mottled skin that is oftentimes lined with pale, uneven stripes. The flavor is similar to other winter squash, but it also resembles a sweet potato and is usually sweeter than butternut squash. Kabocha squash provides vitamin A, C, some of the B vitamins, calcium, iron and fiber.
